I made this twice and I could eat this every day. So delicious and filling and I feel all the healthier when I eat it! My friend, who is a fabulous cook of Mexican food and familiar with sofrito was shocked that I made it from scratch as she was raised with the bottled variety. I told her it was so easy and tasty too. Thank you!
