Wonderful! And my guests wholly agreed. I did make a few pieces with fresh mozzarella, knowing that one or two friends don’t like ricotta (or much of anything interesting, lol). Those were also terrific. I’m going to try this dish in the middle of winter as well. It makes excellent tomatoes that much more excellent… I’m thinking it might be a good way to make winter’s C- tomatoes more enjoyable. With the crusty bread, it should go perfectly with many soups.
