- 1 fresno chile (seeded if desired, finely chopped)
- 1 garlic clove (finely grated)
- 1/4 cup olive oil
- 1 Tbsp. tomato paste
- 1 tsp. paprika (I used smoked paprika, pimenton)
- 1/2 tsp. crushed red pepper flakes
- 1 tsp. honey
- 1/4 tsp. ground allspice
- 1 Tbsp. sherry vinegar (or red wine vinegar, plus more for drizzling, optional)
- 1 1/2 lb. black cod fillet (skin-on, one large piece works best)
- 2 pt. cherry tomatoes (Sun Gold or other, cut in half)
