  • 3 pounds boneless chuck roast (well-trimmed)
  • 1/2 pound baby carrots
  • 1 onion (large, cut into thick slices)
  • 1 pound red potatoes (cut into 1-inch chunks, about 4 medium potatoes)
  • 1 package seasoning (McCormick® Slow Cookers Savory Pot Roast)
  • 1 cup red wine

    Directions

    1. Place roast and vegetables in slow cooker.
    2. Mix Seasoning Mix and wine until blended. Pour over roast and vegetables. Cover.
    3. Cook 8 hours on LOW or 4 hours on HIGH. Remove roast and vegetables to serving platter. Stir sauce before serving. Thicken sauce, if desired.

    Absolutely delicious!!! Just the right amount of red wine to add a touch of sweetness to the savory. As long as you use a dry red wine with some spice, you should be good! This most definitely went onto the dinner rotation list!

    I liked this a lot, though I improvised on the spices because I forgot to buy a seasoning packet. And I didn't measure the wine, just poured in somewhere around half a bottle because I thought "why not?". It ended up a little acidic because of the wine, so next time I will cut that down. But it was pretty awesome otherwise. I would definitely make again.
