- 4 cups water
- 1 cup almond milk (or milk or cream)
- 1 cup onion (chopped)
- 1 can sweet corn (leave out for low carb option)
- 1/2 cup masa flour (mixed in a bowl with ½ cup water until combined)
- 2 Tbsp. paprika
- 1 Tbsp. black pepper
- 1/2 Tbsp. salt
- 3 tsp. minced garlic
- 3 tsp. ground cumin
- 3 tsp. oregano
- 1 tsp. cayenne pepper (optional)
- 1 tsp. pepper flakes (red cracked, optional)
- 12 oz. shredded cheese (monterey jack is my favorite for the recipe!)
