- 56 oz. peeled tomatoes (ground, we like Pastene or Cento)
- 3 Parmesan cheese rinds (optional, will be removed after cooking)
- 1 bay leaf (large, will be removed after cooking)
- 3/4 cup fresh basil (roughly cut)
- 1 1/2 tsp. fresh thyme (or ¾ teaspoon dried thyme)
- 3 Tbsp. extra virgin olive oil
- 1 cup diced celery
- 1 cup diced onion
- 1 1/2 cups carrots (diced)
- 1 Tbsp. chopped garlic
- 1 1/2 tsp. salt
- 1/2 tsp. freshly ground black pepper
- 1 tsp. paprika
- 1 pinch red pepper flakes (optional)
- 4 Tbsp. tomato paste
- 1/2 cup white wine
- 3/4 cup grated romano cheese (freshly)
- 1/2 cup heavy cream
- 2 Tbsp. butter (to smooth out the acidity, but optional)
- 12 oz. cheese filled tortellini (package of frozen)
- 8 oz. baby spinach (or fresh spinach, stems removed and chopped, or frozen may be used if fresh is not available)
