Pretty good, but I would add fish sauce and a red chili next time. Also didn't particularly like the lentils in it and might use rice instead. I make a better soup in a pressure cooker or regular stove top in less than an hour.

Switched the sweet potato for butternut squash as thats what I had pre-cut in the freezer (semi defrosted in microwave first). Switching to the squash kept the calories lower and added a better flavour I feel. Slow cooked for maybe 6 hours on low, but I think my cooker runs quite hot and it probably could have come off after 4 or 5. Used low fat coconut milk and didn't get around to any of the fancy toppings except the corriander. Savoury and comforting, great for a cold day and dead easy. Might be tempted to up the veg next time... perhaps add some sugarsnap peas and babycorn. Made 4 x 500g portions at less than 250cals each

Our family loves this soup! My son added cayenne pepper to his because he like it spicy. The soup alone is a meal. I used one red bell pepper and one orange one but next time I will cut this back to just one pepper. It was very tasty!
