Pretty darn good! Husband said to keep this one. I used bone in chicken thighs, it was no problem. Just de-bone when you are shredding meat. I did misread recipe, added coconut milk at beginning, not 1/2 hour before being finished. I will try other way next time. Needs salt, added chicken bouillon. Make sure to use the lime! Really puts finishing touch on soup. Also, maybe add red pepper strips with the mushrooms at end. They got really mushy in soup. Carrots and onion were perfect.

The soup is delicious but the directions for the curry paste should be increased by two more tablespoons

loved it! so easy and flavorful. we added some red chili paste to spice it up a little. i never got a brown on the chicken so i deglaze the pan with the stock and used the scrapings. key for me was putting the lime juice in and adjusting the spice afterwards.

It was fabulous! I didn't change a thing, but only added a little siracha on top when serving.

Followed the directions exactly and the recipe definitely didn’t turn out great, definitely going to avoid the red curry paste next time
