I have made this soup several times and tweak it depending on what veggies I have in the fridge that need to be used. Green beans, carrots, zucchini, mushrooms. It is always very tasty.

We love this recipe! Found it a few years ago and it has become a regular in our house. Over time it's been tweaked as most recipes do. I don't often have fresh ginger when I decide to make this, so I use ground (fresh is always better, but ground gets the point across :) ) I also don't always use the crockpot for this. I cook the onion and peppers in the red curry paste and fish sauce and then add in the peanut butter and sugar until everything is melted and then add the chicken stock & coconut milk ( only 1 can for our family) once the veggies are soft enough. I let the soup simmer for about a half hour and then add the (baked and chopped) chicken, lime and cilantro, and then serve over basmati! My 2 & 4 year olds lick their bowls clean each time! (Don't forget a good dash or two of Sriracha!)

I had a weird expectation I think that this did not meet. It wasn't quite spicy, but it also wasn't quite peanut flavored. I would descride it as bland. I served it over rice noodles. My family liked it, and my toddler ate a whole bowl. So I count that as a win!

A subtle and savory soup, that was a family hit. Like another reviewer, I would decrease the onion and increase the red curry. I paired it with the Thai Cucumber Salad from The Candida Diet and it was excellent.

Hit the spot on a cold night. Added extra curry paste for some heat and ended up using drumsticks since its what was on hand. Ended up cooking on stove top and cooked until chicken fell off the bones.

Very good, used rotisserie chicken and a little chili garlic paste. Finished with ramen noodles instead of rice.

This meal was awesome. Super simple and tasty. Could swap out rice for glass noodles if you'd like something a little different. Would recommend.

This is one of my favorite crock pot recipes it's so easy to make and my entire family loved it! I would definitely stick with chicken breasts tho I made it once with thighs and I found it too greasy
