- 1 1/2 lb. boneless skinless chicken thighs (or breasts, cut into bite-sized 1” cubes)
- 2 Tbsp. cornstarch (or arrowroot powder for Paleo friendly version, USE 3 tablespoons for an extra crispy coating)
- 1/4 tsp. black pepper
- cooking oil
- 1 cup pineapple chunks
- 2 bell peppers (sweet, I used 1 red, 1 green, deseeded and cut into 1)
- sesame seeds (for garnish, optional)
- 1/3 cup low sodium soy sauce (use gluten free Tamari or coconut aminos for paleo version)
- 1/4 cup chicken broth
- 3 Tbsp. tomato paste (or ketchup)
- 3 Tbsp. honey (or brown sugar)
- 1 1/2 Tbsp. rice vinegar
- 2 tsp. oyster sauce
- 1 tsp. dark soy sauce (leave out if you can't find this)
- 1/4 tsp. sesame oil
- 2 garlic cloves (minced)
- 1/2 tsp. fresh ginger (minced)
- 2 Tbsp. cornstarch
- 3 Tbsp. cool water
