- 2 garlic cloves (chopped)
- 1 red bell pepper (large, chopped, about 1 cup)
- 1 medium zucchini (chopped, about 1-1/2 cups)
- 6 cups water

- fresh ground black pepper
- 1/2 cup long-grain white rice
- 1 cup fresh basil (chopped)
- extra-virgin olive oil (for serving, if desired)
- grated Parmesan cheese (Fresh, for serving if desired)
