- 1 Tbsp. tomato paste
- 2 garlic cloves (peeled and minced)
- 1/2 lb. shallots (peeled and quartered)
- 1 lb. new potatoes (baby)
- 1/2 lb. carrots (peeled and cut into bite-sized pieces)
- 2 cups red wine
- 2 cups tomato puree
- 2 cups low sodium chicken stock
- 2 Tbsp. fresh oregano leaves
- 1 cup frozen peas
- 1 Tbsp. red wine vinegar
- whole milk Greek yogurt (to serve)
- mint (chopped, for garnish, optional)
