- 1/4 lb. pancetta (hunk of, cut into small cubes)
- 1/4 tsp. crushed red pepper (i like to use 1/2 tsp. for a little more heat)
- 2 cloves garlic (finely chopped)
- 1 Tbsp. flour
- 1/4 cup red wine (cabernet preferably)
- 1/2 cup beef broth
- 1 tsp. anchovy paste
- 28 oz. peeled tomatoes (can of whole, preferably San Marzano Tomatoes)
- 1/2 tsp. dried thyme
- 1/2 tsp. dried oregano
- 1 bay leaf
- 2 Tbsp. chopped parsley (freshly)
- 2 Tbsp. basil (freshly chopped)
- 12 oz. pappardelle pasta (or tagliatelle is good)
- Parmigiano Reggiano (Good, freshly grated)

My family LOOOOVED this!!! I doubled it (and added extra veggies and spices) and the kids can’t wait to take this to school for lunch! Will definitely be making this again!!!
