My husband and I really enjoyed it. I used Italian stewed tomatoes rather than fire-roasted. Didn't have fennel head, so I substituted half an onion. Skipped the eggplant and only added 1 TBSP of sugar. It was as sweet as we like it, but I may even cut back a little more on the sugar. Perfect amount of juice to cook the uncooked rigatoni I used. Will definitely do again.
