- 1 tsp. salt
- 1 tsp. black pepper
- 1/2 tsp. celery salt
- 1/2 tsp. dried thyme (or two sprigs of fresh thyme)
- 3 cloves garlic (peeled and minced)
- 1 cup red wine
- 2 cups beef stock
- 1 kg potatoes (floury, – such as Maris Piper or Albert Bartlett chopped into large chunks, no need to peel)
- 3 large carrots (peeled and roughly chopped into large chunks)
- 10 shallots (peeled)
- 10.5 oz. fresh green beans (trimmed)
- 1 Tbsp. salted butter
- 2 Tbsp. heavy cream (double/)
- 2 Tbsp. cornflour
- 5 Tbsp. cold water
- 3 sprigs fresh thyme

This is lovely but the instructions for this recipe are dire. I was using a 3.5 litre pot and this clearly is much bigger, so if I’d been awake at first I wouldn’t have prepared all those spuds. It also assumes some knowledge in slow cooking, which I’m new to. I followed Chris review and didn’t mash the spuds, used chopped floury ones in their skins.
I did like the instructions for not adding some veg til later though.

Didn’t need to mash the potatoes. Just let them cook with the meat and eat as is.
