This was so tender and delicious! Instead of wine, I added 2 packets of liptons onion soup mix with 3 cups of water. it took at least 9 hours on low to cook on low.

I needed to make the following substitutions: used Dunkin’ Dark Keurig for the cup of coffee, and used a red blend box o wine instead of Cabernet. Other than that, followed the recipe exactly. Cooked it on Low for approximately 9 hours 30 minutes with a 3 lb bottom round. Only addition I would add is after searing the roast in the oil, include the browned bits in the bottom of the pan into the gravy mixture.. My husband, a pot roast aficionado (born 1958, youngest of five), said this was “restaurant quality” which is the highest of praise. I gotta say, this was the comfiest of comfort food. Loved it, would recommend this recipe to anyone. I made mashed potatoes (Yukon Gold) as suggested in the recipes, and could not think of a better side. The carrots, onion, and mushrooms are the veg - those portobellos really do a great job infusing a nice flavor during the slow cook and stand up on their own after serving. Done deal.
