- 20 oz. turkey meatballs (frozen, try to find party size or kid size!)
- 1 Tbsp. extra-virgin olive oil
- 1 cup mirepoix (I buy mine from Trader Joe's. Or, just 1 small onion and 1 stalk celery, chopped will do)
- 1 clove garlic (minced)
- 2 sweet potatoes (small, cut into 1" cubes)
- 8 oz. mushrooms (carton, sliced, optional)
- salt
- pepper
- 1 tsp. sage
- 1 tsp. oregano
- 1/4 tsp. cayenne pepper
- 4 cups chicken broth (fat free, low sodium)
- 1 cup kale (rinsed and chopped)
- 2 cups 2% milk

Pretty good recipe. It was easy to make and it turned out pretty good. I have made twice now. May substitute with my own meatballs in the future.

I didn’t love it. It smelt funny while cooking and I just wasn’t impressed. It was food, but not something that filled me up or something I particularly want to eat. I was bummed, but on to the next recipe!
