  • 1/2 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground coriander
  • 2 teaspoons minced garlic (2 cloves)

  • 15 ounces black beans (drained and rinsed)
  • 1 1/4 cups frozen corn (thawed*)
  • 1 tablespoon fresh lime juice
  • 1/4 cup chopped cilantro
  • 1 avocado (large, sliced)
  • 1 mango (sliced, optional)
  • 1 1/2 cups jasmine rice (rinsed very well and drained well)

    My husband and kids loved this! I did add a lot more of the spices than was called for and added dried cilantro and oregano. I also used arborio rice that I sautéed with red onion before adding the coconut mill. I rinsed the starch off the rice before serving it, which is a trick I learned from my mother in law. I'll definitely make this again!
