- 2 cups brown lentils (rinsed)
- 2 carrots (chopped)
- 1 head cauliflower (cut into bite-sized florets)
- 3 Tbsp. curry powder
- 25 oz. tomato sauce
- 25 oz. water (shake it up in the used tomato sauce jar!)
- 2 cups white rice (or brown, try freezer variety)
- 1/2 bunch cilantro (chopped roughly)
