- kosher salt
- cracked pepper (fresh)
- 1/2 tsp. herb seasoning mix (dried Italian, or just dried oregano)
- 1 pinch crushed red pepper
- 2 cloves garlic (minced)
- 1 onion (small, diced)
- 1 cup pepperoncini peppers (thinly sliced, also called banana peppers)
- 1 can diced tomatoes (petit, with the juice)
- 1 oz. pickling juice (reserved, from the pepperoncini jar)
- 2 cups cooked brown rice (for the easiest brown rice directions EVER, see mine here)
- chopped parsley (optional)
- parmigiano reggiano cheese (optional)
