- 2 medium carrots (about 1 cup, chopped)
- 2 celery stalks (about 1 cup, chopped)
- 4 cloves garlic (minced)
- 1 onion (medium, about 1 cup, diced)
- 2 bay leaves
- 2 tsp. dried basil
- 1 tsp. dried oregano
- 3/4 tsp. dried rosemary
- 3/4 tsp. dried thyme
- 32 oz. diced tomatoes (1 can, I usually use fire-roasted or Italian-style)
- 3 Tbsp. tomato paste
- 32 oz. low sodium vegetable broth (carton, 4 cups)
- 2 cups water (as needed)
- salt
- freshly ground black pepper (to taste)
- 2 zucchinis (medium, around 1 1/2 cups, sliced into halves or quarters)
- 1/2 cup red kidney beans (drained and rinsed)
- 1/2 cup cannellini beans (or great northern beans, drained and rinsed)
- 1 cup dried pasta (small shell, use gluten free if necessary or leave out and add chopped cauliflower instead)
- 2 cups baby spinach (fresh, chopped, optional)
- 2 tsp. balsamic vinegar (optional)
- grated Parmesan cheese (or Shredded, for serving)
- fresh parsley (finely chopped, for garnish, optional)

I substituted kidney beans with garbanzo beans and spinach with cabbage and it worked out very well. Makes a great side dish for lunch or dinner. I will definitely make again.
