  • 2 celery stalks (about 1 cup, chopped)
  • 4 cloves garlic (minced)
  • 1 onion (medium, about 1 cup, diced)
  • 2 bay leaves
  • 2 teaspoons dried basil
  • 1 teaspoon dried oregano
  • 3/4 teaspoon dried rosemary
  • 3/4 teaspoon dried thyme
  • 32 ounces diced tomatoes (1 can, I usually use fire-roasted or Italian-style)
  • 3 tablespoons tomato paste
  • 32 ounces low sodium vegetable broth (carton, 4 cups)
  • 2 cups water (as needed)
  • salt
  • freshly ground black pepper (to taste)
  • 2 zucchinis (medium, around 1 1/2 cups, sliced into halves or quarters)
  • 1/2 cup red kidney beans (drained and rinsed)
  • 1/2 cup cannellini beans (or great northern beans, drained and rinsed)
  • 1 cup dried pasta (small shell, use gluten free if necessary or leave out and add chopped cauliflower instead)
  • 2 cups baby spinach (fresh, chopped, optional)
  • 2 teaspoons balsamic vinegar (optional)
  • grated Parmesan cheese (or Shredded, for serving)
  • fresh parsley (finely chopped, for garnish, optional)

    I substituted kidney beans with garbanzo beans and spinach with cabbage and it worked out very well. Makes a great side dish for lunch or dinner. I will definitely make again.
