- 2 lb. beef cross-rib chuck roast (trimmed and cut into 1 - 2 inch chunks)
- 1/3 cup flour (use gluten free flour or arrowroot starch if needed)
- 2 tsp. sea salt (to taste)
- 1/2 tsp. black pepper
- 1/2 tsp. onion powder
- 1/2 tsp. italian seasoning
- cooking oil
- 1 yellow onion (medium, cut into large chunks)
- 4 cloves garlic (minced)
- 6 Tbsp. tomato paste
- 2 Tbsp. balsamic vinegar (or red wine)
- 4 russet potatoes (medium, peeled and chopped into 1 inch chunks, or can use about 10 small baby potatoes with skin on - cut in half)
- 1 sweet potato (large, peeled and chopped into 1 inch chunks, leave out if desired)
- 3 medium carrots (peeled and cut into slices)
- 2 celery (ribs, chopped)
- 2 tsp. worcestershire sauce
- 2 tsp. italian seasoning (or 1 teaspoon dried rosemary 1/2 teaspoon dried parsley, 1/2 teaspoon dried thyme)
- 1 bay leaf
- 5 cups beef broth (homemade or low sodium)
- 1 star anise (optional but adds SO much depth and flavor)
- water (as needed, to cover the vegetables)
- 2 Tbsp. chopped parsley (fresh, for garnish, optional)
- salt
- pepper
- 2 Tbsp. flour (gluten free, or sub with 2 tsps arrowroot powder for paleo OR 1-2 tsps xanthan gum for keto)
- 3 Tbsp. cold water

it was soooo good! i have a 6 and 8 yr old and they even loved it! i made it with round steak and also added corn.

Mediocre. I let it sit over nite and it did not thicken. I then added the slurry with little success.

Absolutely delicious. and the addition of the star anise really gave it a great depth of flavour.

Delicious stew recipe as written. Is now the only beef stew I make. Flavors are rich and hearty, perfect with buttermilk biscuits. Husband loves:) When starting later in the day, it works well to let bubble on the stove for a few hours.
