- 2 cups shiitake mushrooms (chopped)
- 3 inches lemongrass (pieces of fresh)
- 2 inches galangal (piece, root, cut into slices)
- 6 kaffir lime leaves
- 3 cups water
- 1 tsp. tamarind concentrate (can also use gluten-free soy sauce or coconut aminos)
- 1 tsp. coconut sugar (or brown)
- 1 tsp. soy sauce
- 1 cup full fat coconut milk (you can use light, but it won’t be as rich)
- 1/4 cup nutritional yeast
- 2 Tbsp. lime juice (to taste)
- salt (to taste)
