Description
This creamy, gently spiced, all-in-one curry dinner is perfect for busy weeknights. If you plan ahead, you can make the meatballs and sauce in advance and refrigerate them overnight. The next day, let the slow cooker work its magic. Find the curry paste in the international foods aisle at your grocery store, at Indian markets, and online. Directions
- Preheat oven to broil with a rack set 4-6 inches from heat. Line a sheet pan with aluminum foil.
- Combine panko and broth in a large bowl until breadcrumbs absorb the liquid. Stir in eggs, cilantro, ginger, garlic, and 2 tsp. salt until combined. Add lamb and mix until evenly blended.
- Shape lamb mixture into 36 balls, each 2 Tbsp. (use a cookie scoop if you like), and set them on the prepared sheet pan.

I made this with lean ground turkey instead of lamb but otherwise I made it as directed. The meatballs were tender and flavorful, and the sauce was out of this world. Served over rice but would also be good in a pita if you made the meatballs a little smaller. Definitely a keeper!
