Description
This creamy, gently spiced, all-in-one curry dinner is perfect for busy weeknights. If you plan ahead, you can make the meatballs and sauce in advance and refrigerate them overnight. The next day, let the slow cooker work its magic. Find the curry paste in the international foods aisle at your grocery store, at Indian markets, and online. The recipe, which makes 8 cups, is a Yummly original created by Ashley Strickland Freeman.

- 1 cup panko breadcrumbs
- 1/2 cup beef broth
- 2 large eggs
- 2 Tbsp. finely chopped cilantro (plus more for serving)
- 2 Tbsp. fresh ginger (grated)
- 3 cloves garlic (minced)
- 2 1/2 tsp. kosher salt (divided, plus more to taste)
- 2 lb. ground lamb (or ground turkey)
- 2 cans coconut milk (13.5 oz. per can)
- 1/3 cup curry paste (Indian, mild to spicy, such as Patak; or use 1 packet/3 oz. Indian curry sauce, such as Sukhi’s)
- 3 Tbsp. all-purpose flour
- 1 Tbsp. light brown sugar (packed)
- 1 Tbsp. tomato paste
- cooking oil spray (or a little vegetable oil)
- 12 oz. sliced vegetables (refrigerated fajita mix, or stir-fry vegetables; or use 1 cup each sliced onion, red bell pepper, and green bell pepper)
- steamed basmati rice
- lime wedges
- naan bread (optional)

Directions
- Preheat oven to broil with a rack set 4-6 inches from heat. Line a sheet pan with aluminum foil.
- Combine panko and broth in a large bowl until breadcrumbs absorb the liquid. Stir in eggs, cilantro, ginger, garlic, and 2 tsp. salt until combined. Add lamb and mix until evenly blended.
- Shape lamb mixture into 36 balls, each 2 Tbsp. (use a cookie scoop if you like), and set them on the prepared sheet pan.

the idea was great, and with a few personal changes, I could see myself enjoying the recipe more. I would season the meatballs better to start, and probably add a bit of pineapple into the mix of vegetables for personal taste.

I made this with lean ground turkey instead of lamb but otherwise I made it as directed. The meatballs were tender and flavorful, and the sauce was out of this world. Served over rice but would also be good in a pita if you made the meatballs a little smaller. Definitely a keeper!
