- 2 lb. boneless, skinless chicken breasts (or chicken thighs, frozen tenders are okay. If using thawed, cut chicken into cubes.)
- 5 large carrots (peeled and diced)
- 1 onion (medium, peeled and quartered)
- 1 sweet potato (medium, peeled and diced)
- 2 cloves garlic (peeled)
- 1 bell pepper (large, seeded and chopped, I used a green pepper)
- 5 oz. tomato paste
- 14 oz. coconut milk
- 1 1/2 tsp. salt
- 1 Tbsp. curry powder
- 1 Tbsp. Garam Masala
- 1 jalapeno
- 1 tsp. crushed red pepper flakes

Easiest curry recipe I’ve ever made! Using the blender to mix the sauce works out well. I used 4 chicken breasts and fewer carrots, and doubled the sauce. Now we have lots of delicious leftovers!
