- 1/2 onion
- 3 inches ginger (chunk of, sliced)
- 2 Tbsp. coriander seeds
- 4 whole cloves
- 2 whole star anise
- 2 Tbsp. sugar
- 2 Tbsp. fish sauce
- 1 bunch cilantro stems (tied with kitchen twine)
- soup
- 1 lb. dried rice noodles (about 1/4" wide)
- 1/2 lb. chicken meat (breast or thigh, thinly sliced)
- 2 cups bean sprouts (washed)
- 1 handful cilantro leaves
- 1/2 cup red onion (thnly sliced)
- 1/2 lime (cut into 4 wedges)
- Sriracha hot sauce (optional)
- hoisin sauce (optional)
