This is a flavorful, moist recipe that's simple to put together.. I dice the mozzarella up rather than grating it because it's easier and gives the meatloaf the cheese flavor that shredded cheese didn't, . I used the slow cooker once but I usually just put it in my convection oven for 55-60 minutes at 350. I leave off the cheese on top because the diced cheese inside the meatloaf is enough and add the extra sauce to the top at the end to prevent browning. Unless you like it that way.
