- 4 cloves garlic (minced)
- 1 1/2 cups enchilada sauce
- 15 oz. chicken stock
- 15 oz. black beans (drained and rinsed)
- 15 oz. corn (drained)
- 14 oz. fire roasted diced tomatoes (with juice)
- 4 oz. diced green chiles
- 1 tsp. ground cumin
- 1 tsp. chili powder
- 1/2 Tbsp. chili (in adobo sauce only, can add more if you like extra heat)
- 1/4 tsp. masala (graham)

I double the chicken stock and use 2 chicken breasts instead of 3. Otherwise, the soup is too thick.

I doubled the recipe, and really found the soup to be lacking in flavor. I added about a teaspoon of coriander, teaspon of salt, an extra teaspoon of cumin, and 2 tablespoons chopped cilantro (from a tube lol). This was done about an hour before serving, whilst shredding the chicken. I also served it over cilantro-lime rice. THIS is what I've been craving! I will make it again, but a smaller batch with more literal room to play with. That crockpot was so full I had to cook the beans separately lol.

Turned out delicious! My entire family liked it. We added an extra can of black beans and green chillies. I will totally add it to my list of meals to make again.
