This was such a simple, delicious recipe! I made just a few changes based on time allotment and taste preferences. First, I ended up baking this rather than using the slow cooker simply because I wanted it for breakfast. I ended up making a half recipe since it’s just me and my husband (fit perfectly in a 9x9 Pyrex), and baked it at 350 for about an hour so the top and sides got brown and crunchy (yum!). Also, we LOVE onion so I added a whole finely diced smallish onion to the 20oz of hash browns and it was fantastic. I also added a bunch of cracked black pepper to the mix. We both loved it and can see this being perfect as both a dinner and holiday side in addition to being a favorite breakfast item. Would also be perfect for covered dish occasions.
