This recipe is a staple in my healthy meal rotation. You can switch up the meat, add more or less cheese depending on your diet (or omit it), make homemade enchilada enchilada sauce or use canned.... I won a healthy cooking contest at work with this recipe! It also freezes fairly well, making it a nice choice for grab and go lunches.

Cooked really quickly - less than three hrs on high. Added jalapeño and hot salsa really good
