- 1 Tbsp. Greek seasoning (Check ingredients for Gluten-Free)
- 2 Tbsp. extra-virgin olive oil
- 1/2 tsp. oregano (Greek)
- 1/2 tsp. ground black pepper (fresh-)
- 1 head cauliflower (leaves cut off and chopped or grated into "rice" sized pieces)
- 1 green bell pepper (large, finely chopped)
- 1 onion (small, finely chopped)
- 1 Tbsp. extra-virgin olive oil
- 1 tsp. Greek seasoning
- ground black pepper
- salt
- 3 cucumbers (medium, chopped)
- 1 cup cherry tomatoes (chopped)
- 1/4 cup Kalamata olives (chopped, or black olives)
- 1/4 cup red onion (finely chopped)
- 4 oz. crumbled feta cheese (about 1/2 cup)
- 1/4 cup Italian dressing (your choice, I like Newman's Own Original Olive Oil and Vinegar Dressing, which has only 2 carbs in 1/4 cup.)

Delicious. Made it several times but just cook chicken on the stove. Crock pot made it mushy.
