- 2 lb. chicken thigh fillets (skinless, or skinless chicken breasts)
- 1 1/4 cups greek yogurt
- 2 tsp. ground ginger
- 2 tsp. garam masala
- 2 Tbsp. unsalted butter
- 1 Tbsp. vegetable oil
- 2 onions (finely chopped)
- 1 tsp. ground coriander
- 1 tsp. sweet paprika
- 1/2 tsp. ground cumin
- 1/2 tsp. fennel seeds
- 1/2 tsp. cinnamon stick (ground)
- 4 garlic cloves (crushed or finely chopped)
- 14 floz passata (or blend a 14 oz/400g can of whole plum tomatoes until it’s smooth if you can’t get passata)
- 2 Tbsp. tomato paste (puree)
- 5 floz chicken stock
- 2 Tbsp. light brown sugar

- fresh cilantro (coriander)
