- 2 lb. potatoes (halved if large)
- 2 lb. carrots (peeled and cut into about 4" pieces)
- 2 Vidalia onions (large, sliced)
- 12 oz. baby bella mushrooms (sliced)
- 4 tsp. olive oil (to sear the roast ~ optional)

- 1 tsp. ground black pepper

- 1/2 tsp. red pepper flakes (~ optional)
