- 3 lb. beef (or bigger, eye round or top round roast, or another type of beef roast, such as chuck)
- 2 Tbsp. olive oil
- 1/4 cup cornstarch
- 1 tsp. kosher salt
- freshly ground black pepper
- 1 cup beef broth (/stock)
- 1/4 cup balsamic vinegar
- 2 Tbsp. tomato paste
- 1 onion (medium or ½ of a large, quartered)
- 3 garlic cloves (smashed and peeled)
- 1 cup dry red wine (I've used Merlot and Zinfandel)
- 10 oz. cremini (baby bella, or white button mushrooms, halved or quartered)
- 1 cup baby carrots (or whole carrots, peeled and cut into “fingers”)
- 1 sprig fresh rosemary
- 1/2 cup frozen peas (no need to thaw)
