- 2 lb. ground beef (I used 90% lean)
- 1 sweet vidalia onion (medium/large, diced small)
- 1 red bell pepper (medium/large, diced small)
- 5 garlic cloves (finely pressed or minced)
- 2 tsp. kosher salt (or to taste)
- 1 tsp. freshly ground black pepper (or to taste)
- 16 oz. red kidney beans (I used low-salt, drained and rinsed if desired)
- 15 oz. black beans (I used no-salt added, drained and rinsed if desired)
- 14.5 oz. petite cut diced tomatoes (I used no-salt added)
- 8 oz. tomato sauce (plus 8 ounces water used to rinse out can)
- 8 oz. green chile (diced, I used one can mild, one can hot)
- 1 Tbsp. cumin
- 2 tsp. chili powder
- 2 tsp. smoked paprika (regular paprika may be substituted)
- 4 bay leaves
