- 28 oz. red kidney beans (drained & rinsed)
- 1 lb. sweet potato (peeled and cut into 1/2-inch pieces)
- 1 cup dry quinoa
- 14 oz. petite diced tomatoes
- 1 1/2 tsp. italian seasoning
- 1/2 tsp. salt (or more to taste)
- 1/2 tsp. ground pepper (or more to taste)
- 6 1/2 cups low sodium vegetable broth
- 2 cups spinach leaves
- 1/4 cup flat leaf parsley (minced)
- hot sauce (to taste, I used about 2 tbsp of my favorite)
