- 1 Tbsp. dried oregano
- 1 Tbsp. garlic powder
- 1 Tbsp. black pepper
- 1 Tbsp. chili powder
- 1 Tbsp. paprika
- 2 pork baby back ribs (racks, trimmed, see note above)
- 1 white onion (or large yellow, sliced)
- 1/2 cup root beer (see note above)
- 1 Tbsp. olive oil
- 1 1/2 cups finely chopped onion
- 1 Tbsp. garlic (minced fresh)
- 1 cup root beer
- 1 1/2 cups bbq sauce (my favorite homemade version here; also a big fan of Sweet Baby Ray's for storebought)
- 1/2 cup apple cider vinegar
- 1/4 cup brown sugar (packed, light or dark)
- 1 Tbsp. chipotle in adobo sauce (minced, leave out the seeds for less heat)
- 1 Tbsp. worcestershire sauce
- salt
- pepper
