- 1 Tbsp. bacon grease (or veg oil)
- 1 lb. sirloin (london broil, or venison, 1/2" dice)
- 1 lb. ground chuck
- 1 lb. breakfast pork sausage (chub, hot or mild)
- 1 lb. chili (stick or brick)
- 2 onions (large, chopped)
- 1 bell pepper (large, chopped)
- 2 stalks celery (chopped)
- 2 Tbsp. garlic (minced)
- 28 oz. diced tomatoes with juice (can petite)
- 15 oz. diced tomatoes with juice (can regular)
- 1 btl. chili sauce
- 6 oz. tomato paste
- 8 oz. tomato sauce
- 8 oz. beef broth (or can water)
- 2 beef bouillon cubes (if using water)
- 1 can beer (regular or light)
- 3 Tbsp. chili powder (mexene, or more to taste)
- 1/2 cup dried chives
- 2 Tbsp. worcestershire (lea & perrin, saucd)
- 2 Tbsp. powdered garlic (or granulated)
- 2 tsp. powdered onion (or granulated)
- 1 tsp. cayenne pepper (or more to taste)
- 1 tsp. Cajun seasoning (zatarain's or tony cacherie's)
- 3 bay leaves
- 45 oz. red kidney beans (dark, or combination of your favorite chili beans , drained and rinsed)
- crushed red chili flakes (for added heat, optional)
- salt (to taste)
- pepper (to taste)

Couldn't find the chili brick at the grocer, so I used another pound of ground chuck, and adjusted seasonings to taste. I must say, adding the sausage was a terrific idea! I'm entering this in my neighborhood cook-off today and am very optimistic for the outcome. Some of the best chili I've ever tasted!!

Yummy, but I'd use fresh, organic if possible, for the tomatoes, garlic and onion. And cooked/chopped bacon, instead of just the grease. And used 3 types of beans (kidney, pinto, and black). Using a crock pot or electric pressure cooker makes this a (onepot an go type dish)....easy & quick for a busy Mom like me! Family loved it!
