- 1 tsp. turmeric
- 1 tsp. cayenne pepper
- 3 red onions (medium sized, diced, about 1/2 pound)
- 1 tsp. sugar
- 3 cloves garlic (minced)
- 1/2 Tbsp. ginger (grated)
- 1/2 lb. leg of lamb (cubed)
- 3 pieces lamb (on the bone, optional, but helps with the flavor)
- 1/2 tsp. salt (or to taste)
- 1 tsp. freshly ground black pepper
- 2 Tbsp. yogurt
- 3 pods green cardamom (gently bruised)
- 3 bay leaves
- 10 cloves
- 1 stick canela (broken into smaller pieces)
- 15 fingerling potatoes (note, if you are using organic potatoes, you can leave the skin on)
- 2 carrots (medium sized, peeled and cut into 2 inch pieces)
- 1 Tbsp. clarified butter (ghee)
- 1 red onion (small, thinly sliced)
