- 1 lb. mushrooms (sliced)
- 4 shallots (thinly sliced)
- 4 cloves garlic (chopped)
- 2 Tbsp. thyme (chopped)
- 2 Tbsp. sage (thinly sliced)
- 1/3 cup dry sherry
- 1/3 cup beef stock
- 1 1/2 lb. flank steak (or sirloin, at room temp)
