- 8 corn tortillas (cut or torn into bite-size pieces, I used La Tortilla Factory’s organic white corn tortillas or use your favorite)
- 1/2 tsp. cumin
- 10 oz. diced tomatoes (Ro*Tel Original, & Green Chilies, undrained)
- 10 oz. red enchilada sauce (mild or medium)
- 8 oz. tomato sauce
- 1 cup reduced fat cheddar cheese (shredded)
- 1 1/4 cups grape tomatoes (chopped)
- 1 1/4 cups romaine lettuce (shredded)
- 5 Tbsp. sour cream (fat-free, or fat free plain yogurt, optional)
