- 1 cup chopped onion
- 1 red bell pepper (or green, chopped)
- 1 cup mushrooms (chopped)
- 3 cloves garlic (minced, I used 3 teaspoons jarred)
- 4 cups chicken broth
- 15 oz. tomato sauce
- 15 oz. diced tomatoes
- 1/2 tsp. salt
- 1/4 tsp. crushed red pepper flakes
- 3 oz. whole wheat lasagna noodles (about 3 or 4 noodles)
- 1/2 cup fresh basil (chopped)
- 1/2 cup reduced fat mozzarella cheese
- 3 Tbsp. grated Parmesan cheese

It was just okay. Super easy recipe but it was very salty. Also, all of the liquid had been absorbed the next day, so I had to add some chicken stock to bring it back to being a soup...which dumbed down the flavors, except the salt.

Very tasty. I browned the sausage and onions in a skillet instead of the microwave but made the rest of recipe as is. Easy and delicious.

This was awesome! I had leftover noodles from another recipe so I thought this was perfect. I didn't really have 7 hours, so I sautéed the sausage, onions, mushrooms, and garlic on the stove first. I eliminated the bell pepper for preference. I cooked it on high for 3 hours, then added the noodles for another 30 minutes. It came out delicious, and my husband and I really enjoyed it. It was just what my sinus infection needed! The last time I made it vegetarian because my daughter doesn’t eat meat. I used veggie broth and extra seasoning. Topped it with mozzarella, Parmesan, and a dollop of ricotta.

It was really easy to make up in the morning, which was nice. I like my soups to be super flavorful, so I added Italian-seasoned diced tomatoes instead of regular, and then a teaspoon of Italian seasoning. Other than that, everything was as written. It was delicious, and I'm looking forward to leftovers—even though I forgot to add the cheese in!

I really like the flavors! It is a great recipe to use up the last of my lasagna noodles. I love that I can just throw everything in, so fast and simple. I did make the mistake of adding the noodles at the beginning which resulted in soggy noodles but I learned my mistake by when rereading the directions, oops. I also added spinach to the crock pot as I had some I needed to use up. I really liked the addition. I anticipate this may be one of my end of the week clean out the vegetable drawer recipes.
