- 1/2 cup onions (chopped)
- 2 cups mushrooms (chopped)
- 2 Tbsp. minced garlic
- 10 fresh spinach (or z packages frozen, defrosted + water squeezed out)
- salt
- pepper
- 1/4 tsp. red pepper flakes
- 1/4 tsp. nutmeg
- 30 oz. non-fat ricotta cheese
- 1 large egg
- 1/4 cup grated Parmesan cheese
- 9 whole wheat lasagna noodles (prepared, see note*)
- 24 oz. spaghetti sauce (I used and suggest a tomato basil variety*)
- 2 cups part-skim mozzarella cheese

It’s good and tasty. I added mozzarella cheese with the other cheeses in the filling and some cinnamon and white pepper instead of the nutmeg, because I didn’t have any.

Very good. First time I've ever had a meatless lasagne, but I was not dissapointed!
