- 1 tsp. vinegar
- 2 eggs (I like using Egg-Land’s Best eggs)
- 1 English muffin (whole wheat or multigrain, split, see shopping tip)
- 1 wedge light garlic and herb cheese (Laughing Cow, or your favorite flavor, see shopping tip)
- 2 slices cooked ham (½ ounce for each, cut in 4, see shopping tip)
- 2 slices tomato (or 4 smaller slices)
- 2 Tbsp. fat free plain yogurt
- 1/2 Tbsp. light mayonnaise (I like Best Foods Light, Hellman’s)
- 2 tsp. spicy brown mustard
- 1 tsp. butter (reduced-fat, or Smart Balance light, melted in microwave for about 15 seconds, covered)
- 1 pinch salt (and pepper, to taste)
