This. Was. Phenomenal. Simply put. The only thing we didn't do was beat the chicken breasts. I had two very thick breasts on hand so I just cut them in half. Even at around 1/2 of an inch thick, we breaded and then placed on a hot wire cooling rack over a cookie sheet in the oven. We preheated that with the oven. We have run into the issue of our breading being soggy when just placed on a cookie sheet. The cooling rack helps keep the chicken moist and juicy while allowing the breading to crisp! This is by far the best we have ever had. Even from a restaurant!
