- 14.5 oz. diced fire roasted tomatoes (1 can, I like Muir Glen)
- 1/4 tsp. kosher salt
- 1/2 tsp. dried oregano
- 1/8 Tbsp. crushed red pepper flakes
- 1/2 zucchini (large, sliced into ¼-inch planks)
- 1 summer squash (small, or ½ large, sliced into ¼-inch planks)
- 1/2 eggplant (sliced into ½-inch rounds)
- 2 Tbsp. olive oil
