- 2 Tbsp. ketchup
- 1 Tbsp. mustard (I used a spicy brown mustard)
- 1 Tbsp. pickle relish
- 1/3 cup tomato sauce (can or jarred)
- 3 Tbsp. water
- 1 cup cheddar cheese (lite, mozzarella or blend, shredded, I used Trader’s lite Mexican blend)
- 4 red bell peppers (large, yellow or orange, each about 3½ inches high and 3½ inches wide)

I've been making this recipe for about 2 years. We LOVE it! The only thing I do differently is use jasmine rice instead of brown rice.

Love this recipe-use white rice/jasmine rice sometimes and sub in mild sausage-not as healthy that way but delicious either way.

Amazing! I chop the peppers and make it like a casserole so it’s easier for the Little’s to eat

This was awesome! I didn't cover it with foil, so I got more of an crisp to the pepper. I also used mozzarella!

These were easy to make and my husband really enjoyed them. He has always been a fan of stuffed peppers so it's nice to have a low calorie recipe for them.
