OK, how I do it nowadays: After you stir the potatoes (I usually use at least 2-3) and coat them in the coconut oil (not too much oil, maybe a bit less than 2 spoons, on medium heat), pop a lid on that skillet and only occasionally stir them. Do this until they are soft. When you think they're about ready, put the sea salt and cinnamon (to taste! - also I personally skip the parsley) and stir well, put the heat on low and keep them under the lid for one more minute. Then you're done. The modifying factors: no parsley (which imo doesn't add much) and they're not crunchy on the outside and soft on the inside, but soft all over.

Delicious and simple. Made for breakfast but it would also make a great side dish for dinner.

VerySATISFYING!!
I made this dish along with sauté garlic, onions and spinach, with pork chops. Im not sure if i want to be vegetarian, vegan, pescatarian or what...This recipe is my beginning for learning to cook vegan without any animal fat or dairy. I used non diary butter for a familiar southern taste of sweet potatoes. I loved it. Next time i cook it I will add some walnuts or pecans with a bit of heat to then....😋😋💗

I thought it was fabulous! I didn't use exact measurements at all because my potatoes were all wonky and I wasn't sure how many I ended up actually using... but using their ideas and just doing it on the fly? delicious! I added a tablespoon of brown sugar as well (for approximately 3 cups of sweet potato)!

I found a new way to prepare sweet potatoes! Never would’ve thought to use coconut oil and the cinnamon helped the potatoes brown to perfection. Just the way I like them.

It turned out good but I didn't have directions which I hope that I will get. I don't know if you were supposed to boil the potatoes before so they would crisp up better.

Delicious! I used Italian seasoning because I didn't have parsley at the time but I'm making it again right now for meal prep; super easy, quick, nutritious and yummy!

Great recipe. I followed it to the letter and will keep it as a side dish recipe. Good for a weeknight side dish
