Made for Sunday brunch. Was looking for recipe with eggs and chicken, happened to have 1 sweet potato. So good and filling only 3 pts also. A keeper

Delicious! I had some leftover creamy Tuscan chicken breast I used in this recipe and the extra tomato, basil, and cream really elevated the flavor. Easy to make for just myself, too!!
