- 8 apples (5 peeled/2 leaving skins on and cut into thin slices, types that work well: gala, fiji, honeycrisp, jonagold, pink lady, etc.)
- 2 Tbsp. coconut oil
- 1/4 tsp. sea salt
- 1/3 cup orange juice (freshly squeezed, I used small ‘cutie’ oranges.)
- 1/2 tsp. ground cinnamon
- 1/2 tsp. ground cardamom
- 1/4 cup brown sugar (packed)
- 1/2 cup coconut (preferably shaved)
- 2 Tbsp. butter (salted and melted)
- 1 Tbsp. fresh thyme leaves (+ sprigs for garnish, optional)
